The Story

A great all rounder, perfect for creamy espresso and silky flat whites.

This coffee comes from a beautiful organic estate in Aratoca, Santander, Colombia. Four generations have been involved since 1970. 

The Tabi variety, which means 'good' in the native tribal tongue, is one of our favourites. It was introduced in early 2000 to combine the delicious cup qualities of Typica & Bourbon, but with more disease resistance. 

A controlled fermentation period of anaerobic fermentation for 36 hours leads to pulping, follwed by another fermentation of 60 hours. The coffee is then rinsed, pre dried for 20 hours, and then placed on raised beds to bask in the sunshine until it is the perfect humidity.
